Mediterranean Moose and Homemade Hummus

When it comes to food, the Mediterranean diet is like a symphony of flavors that not only delights the taste buds but also plays a beautiful tune for your health. This culinary masterpiece is renowned for its use of olive oil, fresh fruits and vegetables, whole grains, and lean proteins, all of which come together to create a harmony of flavors that is both delicious and nutritious.

 

To combat the high cholesterol that runs in my family (thanks, genetics!), we like to add a lot the Mediterranean diet staples to our daily food repertoire. Substituting olive oil for butter, switching out Greek yogurt for sour cream. Using an avocado spread on a bagel instead of cream cheese. If it can be heart healthy and delicious, count me in!

 

One of the key components of the Mediterranean diet is olive oil, which is rich in monounsaturated fats and antioxidants, helping to reduce the risk of heart disease and inflammation. Hummus is a great example of one of those healthy, yet super tasty dishes that include some of these great heart and body healthy ingredients: olive oil, garlic and chickpeas, to name a few. Hummus can be a snack or meal depending on how you serve it.

 

Now, let’s put that Alaska spin into the mix with Moose! Moose meat is lean and protein-rich, but it also contains high levels of omega-3 fatty acids, which are essential for brain health and reducing inflammation. With the addition of some delicious Mediterranean spices, Moose and Hummus can come together in a beautiful harmony.

 

In all honesty, I did not have tahini on hand when I made this dish, so it is not a true hummus, more of a white bean spread? But, I must say it was still delicious and I would say if you don’t have tahini, you should still go for it and make this dish, though consider swapping out Cannellini Beans instead of Chickpeas for a creamier texture!

Ingredients
    • 1 can chickpeas, drained
    • 1/4 cup lemon juice
    • 1/4 cup tahini
    • 2 garlic cloves, rough chopped
    • 2-6 tbsp olive oil
    • 1/2 tsp cumin
    • 1/2 tsp salt
 
Mediterranean Moose

 

    • 1 lb ground moose meat (substitute beef)
    • 2 tbsp olive oil
    • 1 tsp salt
    • 1/2 tsp lemon pepper
    • 1/2 tsp granulated garlic
    • 1/2 tsp oregano
    • 1/2 tsp dill
    • 1 tsp cumin
    • 1/2-3/4 cup water
    • 1/2 tsp corn starch
Instructions
  1. Prepare hummus. Add chickpeas, lemon juice, tahini, garlic, cumin and salt to blender. Pulse to chop up. Next, blend with about 2 tbsp olive oil. Use more to reach desired consistency of hummus, should be thick and creamy. Taste for seasoning – add more salt, lemon juice or cumin, if needed.
  2. Brown ground moose meat in 2 tbsp olive oil.
  3. Once mostly browned, add spices, stir together for 2 minutes on low heat.
  4. Add 1/2 cup water to moose mix. Let simmer for 5 minutes, on low heat.
  5. Mix 1/2 tsp corn starch and 2 tbsp water in a small bowl, to make a slurry. Add half to moose mixture and turn heat up to medium low, so it simmers lightly. You want your moose mixture to be just a little saucy. If it seems to dry, add a bit more water and more slurry to thicken.
  6. Take off heat when you are happy with desired consistency.
  7. Put hummus into a large bowl, top with moose meat. Add garnishes like feta and more olive oil.
  8. Dip pita pieces or pita chips and enjoy!
