Salmon is the fish of wisdom, swimming against the tide of ordinary flavors. And in Alaska, we tend to have a lot of salmon in our freezers! So, whether you’ve got a small fillet or some leftover salmon, don’t let it be a fish out of water in your fridge. Instead, let’s turn it into a deliciously different dish: Salmon Quesadillas!

Plus, salmon is packed with omega-3 fatty acids, making this a healthier option than your typical quesadilla. So, next time you have some salmon on hand, give this recipe a try. Ingredients
1 small fillet of salmon (or leftover salmon), flaked approximately 1/2-3/4 cup)
Sprinkle of salt, pepper, cumin, granulated garlic and chipotle seasoning
2 large flour tortillas
1 cup shredded cheese (cheddar or Monterey Jack work well)
Place salmon filet in air fryer. Drizzle with olive oil, then season with a sprinkling of salt, pepper, cumin, granulated garlic and chipotle seasoning.
Air fry at 415F for 9 minutes.
Take out of Air Fryer and set aside until slightly cooled. When cooled enough to handle, flake up and set aside.
Heat olive oil in a skillet over medium heat. Add the sliced onion and bell pepper. Cook until caramelized, about 15 minutes. Remove from the skillet and set aside.
Place one tortilla in the skillet on low/medium. Sprinkle half of the shredded cheese over the tortilla. Top with half the cooked salmon, sautéed onions and bell peppers. Flip one half over and continue sautéing until golden brown and cheese is melty.
Remove the quesadilla from the skillet and repeat with second tortilla.
Cut into wedges and serve with fresh cilantro, lime wedges, sour cream, guacamole or salsa, if desired.
