Subsistence Salmon fishing means a lot of salmon for our family to use throughout the year. Some we freeze as filets, some we smoke and a lot, we have canned. One of our favorite things to do with canned salmon is making Salmon Meatballs. Salmon meatballs are a delicious and versatile protein that can be enjoyed in a variety of ways. Using canned salmon makes your favorite dishes not only convenient but also economical and healthy. My main recommendation for canned salmon, is trying to find wild caught, not farmed.

For homemade Tartar Sauce: Mix 1/2 cup mayonnaise, 2 tbsp chopped dill pickles, 2 tsp lemon juice, 1 tbsp fresh dill, 1/8 tsp onion powder, and pepper. Taste and adjust to your liking.

 

Salmon Meatball Mac and Cheese

Elevate your mac and cheese game by adding salmon meatballs. Prepare your favorite mac and cheese recipe and simply add the cooked salmon meatballs into the mix. The creamy, cheesy pasta combined with the tender, flavorful meatballs creates a comfort food dish that’s perfect for any occasion.

    • 1 Mango, diced

    • 1/2 English Cucumber, diced

    • 1/2 Purple Onion, diced

    • Big Handful of Cilantro, chopped

    • 6-8 Mint Leaves, chiffonade

    • Juice of 1 Lime
    • Salt Lightly, to taste, Mix thoroughly.

Warm up some flour tortillas, place a few salmon meatballs in each, and top with shredded cabbage, pico de gallo, and a dollop of zesty lime crema sauce. Canned salmon meatballs are not only versatile but also a smart choice for anyone looking to enjoy a nutritious and delicious meal without breaking the bank. Ingredients
  • 2 cans of canned salmon (approximately 16 oz), drained
  • 1/4 cup seasoned Panko
  • 2 tbsp Parmesan, grated
  • 1 tsp Traeger Seasoning
  • 1 tsp granulated garlic
  • 1 large egg
  • 2 tbsp olive oil
Instructions
  1. Add all ingredients to a large bowl. Mix thoroughly.
  2. Shape into balls, this recipe should make approximately 16-18 balls.
  3. Heat 2 tbsp olive oil in a sauté pan on medium high heat.
  4. Add salmon meatballs and sauté until golden brown on all sides. The salmon is already thoroughly cooked, so you are just looking for a nice color.
  5. Remove from heat and serve with any of the above meals!
