Sweet & Savory Pork Lettuce Boats

Lettuce wraps might seem simple and straightforward, but my sister-in-law, who is Hmong, showed me and my daughters just how delightful and diverse this dish can be. Kaboo’s culinary expertise spans many types of Asian cooking, bringing a variety of flavors and techniques to her table. We are incredibly lucky to have her in our lives, as she continually introduces us to new and exciting dishes whenever we visit.

 

One of the standout recipes she shared with us was her version of lettuce wraps. The combination of fresh, crisp lettuce with a flavorful filling opened our eyes to the versatility and potential of this dish. Inspired by her creativity and skill, I decided to create my own version, which I proudly presented on Season 3, Episode 6 of ‘The Great American Recipe.’

Lettuce wraps might sound unassuming, but they are a revelation in the realm of healthy and satisfying meals. They are packed with vibrant flavors, offering a perfect balance of textures and tastes. Each bite is a delightful mix of fresh vegetables, savory fillings, and aromatic herbs, making them not only a treat for the taste buds but also a nutritious option for any meal.

 

Thanks to my sister-in-law, lettuce wraps have become a staple in our household. Her passion for cooking and her willingness to share her knowledge have enriched our culinary experiences, and we are forever grateful for the delicious journey she has taken us on.

Ingredients

Ground Pork

 

    • 1 lb ground pork
    • 1 large onion, diced
    • 2 tbsp olive oil
    • 1/8 tsp salt
    • 2 cloves garlic, chopped fine
    • 1/4 cup soy sauce, low sodium
    • 1/3 cup hoisin sauce
    • 2 tbsp lemon juice
    • 1 tsp powdered ginger

Toppings

 

    • 1/2 cup mayonaise
    • 2 tbsp sriracha
    • 1 tomato, diced
    • 1 1/2 cup cabbage, shredded
    • 1/2 cucumber, sliced
    • 1/2 cup cilantro, rough chopped
    • 1/2 cup carrot, shredded
    • 2 scallions, sliced
    • 1/4 cup avocado oil
    • 1 tbsp soy sauce, low sodium
    • 1 tsp fish sauce
    • 1 tsp rice wine vinegar
    • 1 tsp toasted sesame oil
    • 1/4 tsp powdered ginger
    • 1/4 tsp sugar
    • Salt, if needed
    • Romaine lettuce for boats, about 16 medium size pieces
Instructions
  1. Dice onions
  2. Add 2 tbsp olive oil to large sauté pan at medium heat.
  3. Add onions and 1/8 tsp salt. Sauté until golden, approximately 10 minutes. Stirring occasionally.
  4. Meanwhile, chop garlic and set aside.
  5. Mix soy sauce, hoisin, lemon juice and ground ginger. Set aside.
  6. Add garlic to onions, mix together and let cook on medium for about 1 minute.
  7. Add ground pork to onions. Sauté until cooked through.
  8. Add sauce and let simmer for another 3-5 minutes.
  9. Remove from heat and set aside.
  10. Prepare Sriracha Mayo by mixing mayonnaise and sriracha together thoroughly. Set aside.
  11. Prepare Asian Slaw topping. Cut cabbage, cucumber, cilantro, carrots and scallion. Combine in large bowl.
  12. Make slaw dressing: combine avocado oil, soy sauce, fish sauce, rice wine vinegar, sesame oil, ginger and sugar. Taste – add salt if needed.
  13. Mix dressing with slaw.
  14. Dice tomato.
  15. Build boats – layer romaine with both cut ends facing inward. Add pork, slaw, Sriracha Mayo and diced tomatoes.
