Garlic Spinach Pizza
In Season 3, Episode 6 of The Great American Recipe, my Garlic Spinach Pizza recipe made its debut. While I didn’t get the chance to prepare it myself due to the recipe swap challenge, Marcella took the reins and delivered a wonderful rendition of it.

If you’re eager to try my version, you’re in for a treat! Here’s the recipe, along with a little pro tip: don’t stress about making the dough from scratch. Your favorite pizza place often sells dough, so you can save some time and effort! But, if you decide to go with this dough recipe, it is a quick rise and is kind of a cross between pizza and focaccia dough. Quite tasty.

Ingredients
Pizza Dough
2 1/2 cups AP flour
2 tsp quick rise instant yeast
1 cup warm water
1/8 tsp sugar
1 tsp granulated garlic
1 tsp rosemary
1 tsp salt
Cooking spray
Toppings
1-2 tbsp olive oil
1/2 tsp Traeger Seasoning
1 pkg frozen spinach, thawed and as much water removed as possible
2-3 cups mozzarella cheese, shredded
1/2 cup cheddar cheese, shredded
1/4 cup Parmesan cheese, grated
6-8 cloves of garlic, finely chopped
Instructions
Make the dough
Combine warm water with yeast and sugar. Mix and set aside for 5 minutes
Add bloomed yeast water mix to stand mixer.
Add flour, granulated garlic, salt and rosemary.
Mix with kneading hook on low for 2 minutes. Adjust to medium speed for another 5-7 minutes.
Spray a 9″x13″ glass baking dish with cooking spray.
Add dough to baking dish.
Cover with plastic wrap and set in warm place for 45 minutes.
Press out dough gently to edges. And now it’s ready for the topping.
