Lasagna just got a whole lot wilder—moose style!

Moose Sausage Lasagna

When it comes to crafting a lasagna that’s both hearty and uniquely Alaskan, ground moose breakfast sausage is the perfect star ingredient. Its rich, slightly gamey flavor adds depth, while the breakfast sausage seasoning brings a hint of spice that perfectly complements layers of cheesy, saucy goodness.

 

Moose is a lean, protein-packed meat, and when turned into breakfast sausage, it carries a blend of spices like oregano, black pepper, and a touch of fennel—classic flavors that elevate any dish. Using moose in your lasagna not only gives it an Alaskan flair but also creates a satisfying, wholesome meal that’s perfect for feeding a crowd or stocking your freezer with leftovers.

To serve, spoon those tender meatballs and their sauce over a bed of cilantro lime rice, then top it all with a spattering of cilantro, a squeeze of fresh lime juice and a sprinkling of shredded Monterey Jack cheese. The result? Comforting, bold, and deliciously unique.

Whether you’re cooking from your moose meat stash or just want to try something new with your ground protein of choice, this recipe brings a little Alaskan spirit to your dinner table—with a spicy kick.

Ingredients
The Meat Sauce

  • 1 package Lasagna noodles
  • 1 lb Moose Breakfast Sausage (Sup any mild breakfast sausage)
  • 2 tbsp olive oil
  • 1 small/medium onion, diced
  • 4 cloves garlic, diced fine
  • 1 cup mushrooms, diced
  • 1 jar Marinara or you favorite Spaghetti Sauce
  • 1 can Fire-Roasted Diced Tomatoes
  • 1 tsp oregano
  • 1 tsp granulated garlic
  • 1 tsp basil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp fennel seeds

 

The Cheese Layers

  • 2 cups mozzarella, shredded
  • 1/2 cup parmesan, shredded
  • 2 cups cottage cheese
  • 1 package chopped spinach, drained and dried
  • 1 egg
  • 2 cloves garlic, diced fine
  • 1/2 tsp granulated garlic

Instructions
  1. In a large bowl, mix 1 cup mozzarella (setting 1 cup aside for topping lasagna), parmesan, cottage cheese, spinach, egg, fresh garlic and granulated garlic together thoroughly and set aside.
  2. Sauté onion in olive oil at medium low heat until translucent and beginning to golden – approximately 5-7 minutes.
  3. Add mushrooms and sauté for an additional 4-5 minutes.
  4. Add garlic and saute with onions and mushrooms for 1 minute.
  5. Add your moose breakfast sausage into the onion mixture, breaking up and moving around until golden brown.
  6. Add Marinara/Spaghetti Sauce, diced tomatoes and spices to moose/onion mixture.
  7. Let sauce simmer on low while your pasta boils.
  8. Heat pasta water until boiling, add lasagna noodles and boil following package directions.
  9. When noodles are done, take out and lay out on parchment paper, so they don’t stick together.
  10. Spray a 9″x13″ glass baking dish with non-stick spray.
  11. Add approximately 3/4 cup of meat sauce to bottom of glass pan.
  12. Add layer of noodles.
  13. Add half of the cheese mixture on top of the noodles, spread evenly.
  14. Add another 3/4-1 cup of meat sauce on top of cheese mixture, then another layer of noodles.
  15. Repeat process once. Then top everything with remaining meat sauce and 1 cup mozzarella.
  16. Cover your dish with foil and bake at 375°F for 25 minutes, then remove the foil and bake for an additional 15 minutes to get that golden, bubbly top layer.
