Thai Moose Salad
One of my favorite ways to reinvent moose steak is by transforming it into a vibrant Thai-inspired salad. Light, fresh, and packed with bold flavors, this dish proves that leftovers never have to be boring.
Thin slices of moose steak are tossed with crisp cucumbers, juicy tomatoes, scallions, and thinly sliced shallots. The magic happens in the dressing—a simple combination of fresh lime juice and fish sauce that creates the perfect balance of tangy, salty, and refreshing flavors. Every bite is bright, zesty, and incredibly satisfying.
What I love most about this salad is that it feels indulgent while still being health-conscious. It’s loaded with fresh vegetables, lean protein, and a dressing that relies on bold ingredients rather than heavy oils or creamy sauces. The result is a meal that’s both nourishing and full of flavor.
Living in Alaska, I’m fortunate to have moose in my freezer, and its rich flavor works beautifully in this dish. Moose is naturally lean, high in protein, and packed with nutrients like iron and B vitamins. However, I know most people won’t have access to wild game, and that’s perfectly okay. Thinly sliced grilled beef steak makes an excellent substitute, and for an even quicker meal, deli roast beef works surprisingly well too.

Ingredients
- 1 cucumber
- 1 firm tomato or 10-12 baby or cherry tomatoes
- 2 scallions
- 1/2 lb thinly sliced steak (fresh or leftover), or deli roast beef
- 1 tbsp vegetable oil
- 2 tbsp fish sauce
- 1/3-1/2 cup fresh lime juice
- 1 tsp sugar
- 2 tbsp shallots, finely diced
- salt and pepper, to taste
Instructions
- Make dressing: In jar or bowl, combine vegetable oil, fish sauce, lime juice, sugar and shallots. Taste – determine whether you want to add more lime juice. Whisk thoroughly and set aside.
- Cut cucumber lengthwise, then in half-moon slices.
- Dice tomato into small bite size pieces. If using smaller tomatoes, just half or quarter them, depending on size.
- Slice scallions diagonally in approximately 1 inch pieces.
- If using leftover or even fresh made steak, slice as thin as possible. If using deli roast beef, just chop or tear into pieces.
- Combine cucumber, tomato, scallion and steak slices in large bowl.
- Give the dressing a quick whisk and then pour over salad. Mix thoroughly.
This salad is proof that a handful of fresh ingredients and a bright, flavorful dressing can completely transform leftover meat into something special. Whether you’re using moose, beef steak, or roast beef, it’s a delicious way to bring the bold flavors of Thailand to your dinner table.
